An easy and delicious weeknight meal, love the goat cheese! I served it with a side of brown rice.
Ingredients:
4 chicken cutlets (a little over 1 1/2 pounds)
kosher salt and pepper
3 tablespoons olive oil
1/2 pound fresh sliced mushrooms
1/2 cup heavy cream
1/2 cup goat cheese
1/4 cup chopped parsley
Directions:
Season the chicken with 1/2 teaspoon salt and 1/4 teaspoon pepper.
Heat 2 tablespoons of the oil in a skillet over medium high heat. Cook the chicken in batches until golden brown, about 2 minutes per side. Transfer to plates.
Add the mushrooms and remaining tablespoons of oil to the pan and cook, tossing occasionally, until tender, 4 to 5 minutes.
Stir in the heavy cream, goat cheese, parsley and 1/4 teaspoon each salt and pepper. Serve over the chicken.
I serve it over Trader Joe's Brown Rice, so easy.
