Mexican Wedding Cakes

These are Paul's favorite Christmas cookie.  His mother made them every year and we have carried on the tradition.

1 cup butter, softened
8 tablespoons confectioners' sugar
2 cups flour
2 cups finely chopped pecans (or walnuts)
1/2 teaspoon vanilla

Preheat oven to 350 degrees.

Mix all the ingredients together with a mixer until well blended.  Roll dough into round small balls (about 1 inch around).

Bake for 10-12 minutes. 

Cool completely on racks and then roll in additional powdered sugar.
