Bisquick Chocolate Chip Cookies

Just made these- OMG DELICIOUS!


Bisquick Chocolate Chip Cookies



1/2 cup butter, softened
1 cup brown sugar, packed
2 teaspoons vanilla
1 egg
2 3/4 cups Bisquick baking mix
1 cup semi-sweet chocolate chips (6 oz)

Heat oven to 375°F. In large bowl, mix butter, sugar, vanilla and egg. Stir in Bisquick mix, chocolate chips and nuts. Drop dough by rounded teaspoonfuls onto ungreased cookie sheet, d about 2 inches apart; flatten slightly. Bake 8-10 minutes or until golden brown. Remove from cookie sheet to cooling rack.

Aunt Carole's Cheese Chili Dip

When Paul was a teenager he would make a meal out of this popular dip that we first had when visiting Aunt Carole.  It's a Foley favorite!


1 (8 ounce) package cream cheese
1 can Hormel chili
1 package shredded cheese
1 bag chips to dip

Spread 1 package of cream cheese in a round dish.

Pour 1 can of Hormel chili on top of cream cheese, then 1 package of shredded cheese on top of chili.

Put in microwave for 1 minute or until cheese is melted.

Six Week Muffins

I kept this mix in a large container in the refrigerator for fresh muffin treats on the weekends.

4 eggs
3 cups sugar
1 cup oil
1 quart buttermilk
1 - 15 ounce box Raisin Bran cereal
5 cups flour
5 teaspoons baking soda
1 teaspoon salt

Beat eggs, sugar, oil and buttermilk.  Stir in Raisin Bran.

Combine flour, baking soda and salt and add to mixture and blend well.

Grease 12 muffin cups.  Fill each 2/3 full with batter.

Bake at 350 for 20 minutes or until set. 

Delicious right out of the oven!

Irish Soda Bread

This recipe is from Mildred E. Foley aka "Granny Violets" to her midwest grandchildren, Carole, Peter, Paul, Kathie and Patrick. 

1/2 cup shortening (Crisco)
1 cup sugar
1/2 teaspoon salt
3 cups flour
3 teaspoons salt
3 teaspoons baking powder
1/2 teaspoon nutmeg
2 teaspoons caraway seeds
1 scant cup raisins

Mix in 1 1/2 cups milk.  Batter will be thick and sticky.  Bake one hour at
350 degrees.  Makes 1 large loaf pan or 2 small loaf pans. 

Buster Bar Dessert

This was first made by Cindy Hanzel during the 80's Lincoln, Nebraska.

Crust

1 - 15 ounce package cream filled chocolate cookies (aka Oreos)
4 Tablespoons butter, melted

Fudge

1 cup butter
3 cups powdered sugar
3 - 1 ounce squares semisweet chocolate
4 eggs, beaten

Filling

1/2 gallon vanilla ice cream, softened
1 cup spanish peanuts

Topping

1 - 12 ounce container frozen whipped topping, thawed or
homemade whipped cream. 

Crumble cookies until fine, reserving 1/3 cup crumbs for top.
Mix with 4 tbsps. melted butter and put in a 9 x 13 inch pan. 
Set aside in refrigerator.

In saucepan combine 1 cup butter, powdered sugar, chocolate and eggs until boiling stirring constantly until thickened (about 8 minutes); let cool.

To assemble:
Spread vanilla ice cream over crumbs in pan. 
Sprinkle peanuts over ice cream and freeze until firm. 
Spread fudge on top and freeze until firm.
Spread whipped topping and reserved 1/3 crumbs.
Freeze until firm.





 


Mom's Gingerbread

This recipe comes from my sister-in-law Kathleen Foley Cornwell. 
She says "This is as good as I remember it from when were young."

Paul says it is one of his Mom's favorite recipes. 

1/2 cup melted shortening
1/2 cup sugar
1 cup molasses
2 eggs
1 teaspoon baking powder
2 1/2 cups flour
1 cup hot water
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
1 teaspoon salt

Cream sugar and shortening.  Add molasses and beat.  Stir baking soda into hot water then add to molasses and beat.

Sift flour, baking powder, spices and salt.  Add to mixture and beat well. 
Add well beaten eggs.

Beat thoroughly and pour into greased pan 8 x 12 x 2.
    (I think mine is 8 x 11 1/2).

Bake in moderate oven (I did 350) from 30 to 45 minutes (I did 35) or until it leaveds side of pan.

Serve hot or cold (I put in the refrigerator after first cut..yum!) 

Extra special with fresh whipped cream. 

Zucchini Tomato Bites

These were originally made as an appetizer but I think they could be served as a side dish also.

5 small zucchini, cut into 1/2 inch slices
4 ounces Gorgonzola cheese, crumbled and chilled
1 pint cherry tomatoes, thinly sliced
Fresh small basil leaves
Freshly ground white pepper to taste
5 1/3 ounces Parmesan cheese, finely grated

Line baking sheet with baking parchment. 
Scoop out the center of each zucchini slice carefully with a melon baller, creating a shell that resembles a bowl.  Fill each shell with about 1/2 teaspoon of the Gorgonzola cheese.   Top each bite with 1 tomato slice and 1 basil leaf.  Sprinkle with white pepper and Parmesan cheese.

Arrange the bites on the prepared baking sheet.  Bake at 400 degrees for 5 to 7 minutes or until the cheese melts.  Do not allow to brown.  You may prepare several hours in advance and store, covered, in the refrigerator.  Bake just before serving.

Makes 50 to 60 appetizers.

O'Henili Bars

These are also known as O'Henry Bars.  I found the recipe years ago in a Junior League cookbook while on a trip to Hawaii.

4 cups oatmeal (I use Quick Oatmeal)
1 cup brown sugar
2/3 cup melted butter
3 teaspoons pure vanilla extract
1/2 cup light corn syrup

Preheat oven to 375 degrees.

Mix ingredients.  Spread into a greased 9 x 13 inch pan.  Bake for 12 minutes.
Cool for 30 minutes.

Frosting

1 (12 ounce) package semi-sweet chocolate chips
2/3 cup creamy peanut butter

Melt chips with peanut butter in microwave.  Mix well.  Spread on bars and refrigerate until frosting hardens. 

Pete's Fabulous Fish Gumbo

This delicious seafood dish was made for us by my brother-in-law Pete Foley
during a visit to Grand Rapids, Michigan. He named his recipe and wrote this recipe card.




 

Grandma Foley's Rhubarb Sauce

This simple yet delicious recipe originated with
Grandma Christine MacIver Foley. 

1/2 cup sugar
1/2 cup water
4 cups fresh rhubarb, cut into 1 inch pieces
Red food coloring

Combine sugar and water in saucepan and bring to a boil.

Add rhubarb and simmer for about 20 minutes, stirring occasionally. 

Add red food coloring (if desired) and chill in refrigerator.

Serve over good vanilla ice cream.*

*She meant Breyers! 

Lemon Garlic Chicken Roll-Ups

1/2 cup plus 2 tablespoons butter, melted
1 clove garlic, crushed
3/4 cup dry bread crumbs
1/2 cup parmesan cheese
1 1/2 tablespoons minced parsley
1 teaspoon salt
Pepper, to taste
6 chicken breasts, halved, skinned and boned
Juice of one lemon
Paprika, optional


Preheat oven to 325 degrees.

Pound chicken breasts to flatten.

Combine 1/2 cup butter, garlic and 2 tablespoons lemon juice, set aside.

Combine bread crumbs, cheese, parsley, salt and pepper; stir to blend.

Dip each chicken breast in butter mixture and coat with breadcrumb mixture.

Roll tightly, starting at narrow end and secure with wooden pick.

Arrange rolls in a shallow greased baking dish.  Drizzle with mixture of remaining melted butter and 1 tablespoon lemon juice. 

Sprinkle with paprika.

Bake for 50 minutes.

~Serve with Potato Casserole Supreme and a fresh vegetable~

Potato Casserole Supreme

This is a delicious mashed potato casserole and my kids loved it when served with Lemon Garlic Chicken Roll-ups.

9 medium baking potatoes
1/2 cup butter
1 1/2 teaspoons salt
1/4 teaspoon white pepper
2/3 cup warm milk
1 1/2 cups cheddar cheese, grated*
1 cup heavy cream, whipped

Preheat oven to 350 degrees.

Peel and boil potatoes in a saucepan until tender.

Drain and beat in a large bowl with mixer until fluffy, adding butter, seasonings and milk. 

Pour into buttered casserole dish. 

Fold cheddar cheese into whipped cream and spread over top. 

Bake for 25 minutes or until golden brown. 

May be prepared ahead of time and baked when needed.


*This was before bagged shredded cheese (yes, the 1970's).  We used to buy the block and grate it by hand.

Grandma's Peace and Love Cookie Cake

 


Grandma's Peace and Love Cookie Cake*
 
3/4 cup brown sugar
3/4 cup white sugar
2 sticks unsalted butter, softened
2 tsp. pure vanilla extract
2 large eggs
 2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 cups semi-sweet or milk chocolate chips
 
 
Preheat oven to 350 degrees.  Grease (use baking Pam) a 14 x 2 inch round pan. Scoop cookie dough uniformly around prepared pan using an ice cream scoop.  Flatten in pan.  Bake for 22 minutes or until golden brown.
 
Cool in pan on wire rack, invert onto large wire rack and back onto serving platter to cool completely. 
 
Decorate with Betty Crocker Cookie Icing for lettering and Betty Crocker Cake Icing (with decorative tips) for edges. I usually put stars around the edge.
   
Use pizza wheel for cutting into small squares.

Checkerboard Dessert

Can't cook?  In a rush to bring a dessert to a party?  Kids want to bake? This easy dessert looks cool, is super tasty, and appears like you worked on it for hours.  Now, quick, run to the store and buy pre-made chocolate chip and chocolate cookie dough (or brownie dough if available).  It comes in squares already, grease a 9 x 13, checkerboard it, bake for 22-25 minutes (make sure to underbake it a little for gooey goodness) at 350 degrees.  BONUS:  there are always a few leftover dough bites and who doesn't like raw cookie dough?

Where it all began...

In the summer of 1999 our mom gave each of us a copy of the Foley Family Cookbook. Nearly 14 years later (that's correct, right, because I suck at math?) it's been spilled and spattered on, it's a bit tattered and torn, but most of the recipes have been made with love for family and friends. This blog is the next generation of the cookbook binder. We've gone electronic and we hope now everyone can enjoy the recipes we love and we can forever log family favorites for generations to come.

Vegetable Cheese Soup


~A Foley favorite for many years ~

 Originally from my cookbook collection “A Taste of Salt Lake.”

Prep time: 30 min

Total time: 1 ½ hr

 

Makes 6 servings

Ingredients

  • 2 cups diced potatoes
  • 1  onion, diced
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 can corn (any size)
  • 1/4 cup butter
  • 2 10 3/4-ounce cans chicken broth
  • 2 teaspoons or 2 cubes chicken boullion
  • 2 cups milk (I use 2% or whole milk for creaminess)
  • ½  cup flour
  • 3 cups finely shredded Sharp Cheddar cheese
  • 1 tsp. dry mustard
  • 1/8  tsp. cayenne pepper

Directions

In a large saucepan combine diced vegetables, butter, boullion, and broth together. Simmer for 30 minutes or until vegetable are tender. In a medium bowl gradually mix milk with flour; blend until smooth. Gradually add milk mixture to vegetables, stirring constantly. Add grated cheese, dry mustard and cayenne pepper. Simmer and stir until cheese melts.*

*If soup gets too thick, thin with milk.

Serve with Oyster Crackers or Saltine Mini’s.

I made this for Paul's 70th Birthday Party. Make sure the oven is very clean before roasting the beef at 500 degrees. Trust the recipe cooking time and the beef will turn out perfect.   Slice onto brioche rolls.

Tomato Feta Salad

So fresh, light and delicious. I make a lot during the summer. Add cooked pasta to make it a meal.

Hamburger Dip

 
1 1/2 - 2lbs ground beef
1 small onion diced
2-3 cans Ro*tel diced tomatoes with green chilies(drained)
32 oz Velveeta

Fry Onion and Beef

Drain Oil
Add Ro*tel & Cheese
Melt over low heat stirring frequently

Add salt, pepper, red pepper and garlic salt as desired


Serve with Frito Scoops or Tortilla Chips

Use a 10" springform pan.

I made this recently for Paul's 70th birthday party. I added fresh blueberries.  It was a big hit.

Follow this exactly, and add some powdered sugar over the chocolate drizzle and it will not disappoint.  Rivals Portillos's Chocolate Cake. Maybe better.  Give it a try!

Maddie's Pizza Cups

No recipe here - Maddie made these up.

Frozen phyllo cups (found in the freezer section of the grocery store by the desserts)
Add some pizza sauce to the bottom
Top with cheese and tiny pepperoni bites
Bake at 350 for about 10-12 minutes - until cheese melts.

(Can make these with sausage or other pizza toppings)

**You can also use the cups and place a slice of brie and top with jelly/jam of your choice**

The possibilities are endless with these fab little cups.

Great Soup For a Cold Night

I add shredded carrots and one onion and use all chicken broth (no water).  Also use half and half instead of heavy cream to save some calories.  Serve with a crusty bread.  YUM!
